Job Description:

The Manager of Global Menu Coffee & Beverage Technology is a newly created opportunity to help lead and change how McDonald’s develops and executes its coffee portfolio - reaching millions of people daily. This role will serve as the global technical resource - impacting taste, quality and influencing the equipment and operations within the McDonald’s system. This role will support the Global Menu Strategy team and country Coffee/Menu, Supply Chain, and Operation teams.

    Qualifications:

    Technical coffee processing knowledge, from bean to cup

    • Familiarity with coffee chemistry and reaction throughout processing and brewing
    • Experience in coffee analytical testing equipment & interpretation of analytical data (E.g., roast color analysis, micron/particle size analysis, moisture & oxygen analysis, TDS, pH, etc.)
    • Knowledge and experience in
    • (i) Green coffee selection/grading,
    • (ii) Roasting and processing expertise - roast profiles, roast quality control charting, grinding, and packaging
    • (iii) Coffee brewing equipment, methods, and extraction methodology - brewing fundamentals and impact on final product experience

    Coffee operations expertise, particularly in a high-throughput, multi-location restaurant/café/food service environment

    • Understanding of an inline beverage service and experience developing standards and procedures
    • Understanding of critical-to-quality consumer-facing attributes (milk steaming, etc.) and experience troubleshooting these issues in a café environment
    • Experience training both baristas and restraint staff members preparing coffee

    Coffee menu developmentand culinary expertise

    • Technical R&D experience in coffee roast profile development, blend development and drink/recipe development
    • Knowledgeable across a complete coffee drink portfolio (espresso and espresso-based beverages, drip coffee, cold coffee, etc.)
    • Demonstrated success working with and influencing cross-functional teams and stakeholders at different levels, including comfort soliciting input both formally and informally
    • Comfortable juggling multiple projects and the needs of various stakeholders
    • Bachelor’s or master’s degree, or equivalent work experience

    Beneficial, but not required

    • CQI or SCA sensory trained & certified in coffee cupping
    • Experienced & knowledgeable in SCA brewing & cupping protocols/practices
    • Barista certifications/training
    • Experience with bakery production and bakery goods
    • End-to-end product development, scaleup, and deployment
    • Experience in a global role, working with and influencing country teams
